The Easiest Chili You'll Ever Make

I don’t know about you, but my mind, my body and definitely my soul were not made for the winter. The one plus side of these east coast winters is that I get an excuse to make tons of soups and stews like a sturdy grandma from the old country. (prolonged exposure to inclement weather also causes delusion.)

But let’s not get ahead of ourselves- cold weather also makes me lazy AF. As I hibernate like a small bear waiting for the first signs of spring, I’m mostly looking to cook things that are easy, fast & satisfying- but still healthy.

So without further ado, may I present to you this gloriously easy protein-packed three-bean turkey chili:

What you’re gonna need:

  • 1 onion

  • 3 cloves minced garlic, or however much you like tbh

  • 1 can red kidney beans, drained & rinsed

  • 1 can black beans, drained & rinsed

  • 1 can garbanzo beans, drained & rinsed

  • 1 lb ground turkey breast

  • 1 24 oz jar tomato sauce (check the ingredients for simple ones you can pronounce)

  • 1 28 oz can low-sodium/no salt added whole peeled tomatoes

  • 1 stalk celery, diced

  • 1 sweet potato, diced (the photo above is sans tater, cause i forgot it)

  • 2 ears corn, shucked

  • 2 tbsp cumin

  • 2 tbsp paprika

  • 4 tbsp chili powder (I like a lil kick, but adjust to preference)

What you’re gonna do:

  1. In a large pot, heat 2 tbsp oil

  2. Add onion, garlic, celery, sweet potato and corn to the pot

  3. stir until onion and celery become translucent

  4. Add ground turkey until there’s no more pink, stirring occasionally to break up the meat

  5. Dump the rest of that shit in; stir

  6. Bring to boil, then set burner to med-low to let simmer

  7. bide your time under a blanket, and let Netflix know that yes, you’re still watching

  8. Stir occasionally, breaking down the whole tomatoes

  9. Once the tomatoes are LIQUEFIED, taters are soft & it looks like something you can serve, do so

  10. Top with your chili faves: Greek yogurt, avocado, corn bread, etc.
